Fairmont Cheshire, The Mere joins The Savoy, Fairmont Windsor Park and Fairmont St Andrews as the brand's fourth UK property.
Following a £125 million transformation by Select Group, with interiors by award-winning Bergman Design House, the property offers 116 bedrooms including 23 suites. Sculptural forms, layered lighting and richly textured finishes evoke the timeless glamour of mid-century hospitality.
Dining: Gordon Ramsay at The Mere serves as the main restaurant, featuring a refined British-inspired menu including Ramsay's signature Beef Wellington, a private dining room, terrace overlooking The Mere Lake and a speakeasy bar. The Orangery serves quintessentially British afternoon tea by day before transforming into a champagne and oyster bar by evening. The Club Lounge blends globally inspired dishes with Indian-influenced cuisine.
Wellness: The Fairmont Spa occupies a beautifully restored Victorian stable block, featuring a 20-metre pool, Finnish barrel sauna, ice baths, hammam steam rooms, salt inhalation chambers and six dedicated treatment rooms. Skincare partners include Wildsmith Skin, KAMA Ayurveda and 111Skin.
Golf: The 18-hole championship parkland course, originally designed in the 1930s by James Braid and George Duncan, is framed by The Mere Lake and Cheshire countryside.
Events: The Grand Ballroom spans 1,000 square metres and hosts up to 1,000 guests, divisible into six spaces. Four boardrooms with parkland views offer additional meeting and private dining space.
